Method
 

Preparation
  1. Lightly spray two 12-ounce microwave-safe mugs with nonstick cooking spray.
  2. In a medium bowl, combine the mashed bananas, brown sugar, melted butter, milk, and vanilla extract. Stir until smooth.
  3. Add the flour, baking powder, cinnamon, and salt. Stir just until combined.
  4. Fold in the chopped walnuts.
  5. Divide the batter evenly between the two mugs and top with additional walnuts.
Cooking
  1. Microwave each mug for 90 to 120 seconds, checking for doneness at 90 seconds.
  2. Serve warm drizzled with caramel sauce.

Notes

Use room temperature butter for even mixing. Store in the fridge for up to 2 days if leftovers remain. Adjust the microwave time based on wattage.
