Oat Topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
  2. In a large bowl, combine sliced peaches, blueberries, granulated sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt. Gently toss until the fruit is well-coated. Transfer this mixture into the greased baking dish.
Make the Topping
  1. In a separate bowl, mix oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold, cubed butter into the bowl and work the mixture until it resembles coarse crumbs.
Combine and Bake
  1. Sprinkle the crumble topping evenly over the fruit filling.
  2. Bake in the preheated oven for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbling.
  3. Allow the crisp to cool for about 15 minutes before serving.
