Filling
  • 8 ounces cream cheese, softened

  • 6 ounces semi-sweet chocolate, melted and slightly cooled
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/4 cups heavy whipping cream, divided

Crust Preparation
  1. In a medium bowl, crush the chocolate sandwich cookies into fine crumbs. Mix the crumbs with melted butter until evenly combined. Press this mixture firmly into the bottom and sides of a 9-inch pie dish. Chill in the refrigerator for about 20 minutes, or until set.
Filling Preparation
  1. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, cocoa powder, and melted semi-sweet chocolate. Mix until creamy and fully blended.
  2. In a separate bowl, whip 1 cup of the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until light and fluffy.
Pie Assembly
  1. Spoon the filling into the chilled crust, smoothing the top with a spatula. Refrigerate for at least 4 hours, or until the pie is fully set.
Ganache Preparation
  1. Heat the remaining 1/4 cup of heavy whipping cream until just warm. Pour over the chocolate chips, letting it sit for 1 minute, then stir until smooth to make the ganache.
