Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Incorporate the eggs one at a time, blending each thoroughly before adding the next, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt until combined. Gradually add this dry mixture to the creamed mixture until just blended.
- Gently fold in the chocolate chips and chopped cherries.
Baking
- Using a tablespoon, drop rounded portions of dough onto ungreased baking sheets, keeping a few inches between each mound.
- Bake in the preheated oven for 10-12 minutes, until the edges are set. The center should look slightly undercooked.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
