  • 1 cup unsalted butter, softened Choose high-fat butter for best flavor
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Replace with gluten-free blend for gluten-free version
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Use quality chocolate for best flavor
  • 1 cup dried or fresh cherries, chopped Soak dried cherries in warm water for 10 minutes if used

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Incorporate the eggs one at a time, blending each thoroughly before adding the next, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt until combined. Gradually add this dry mixture to the creamed mixture until just blended.
  5. Gently fold in the chocolate chips and chopped cherries.
Baking
  1. Using a tablespoon, drop rounded portions of dough onto ungreased baking sheets, keeping a few inches between each mound.
  2. Bake in the preheated oven for 10-12 minutes, until the edges are set. The center should look slightly undercooked.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

Serve cookies on a vibrant plate, garnished with fresh cherries or mint. Pair with a glass of cold milk or coffee for an elevated experience.
