Ingredients
  

For the crust
  • 2 cups vanilla wafer crumbs Use Nabisco Nilla Wafers for best results.
  • 6 tablespoons unsalted butter, melted
For the cheesecake filling
  • 24 ounces cream cheese, softened Use Philadelphia cream cheese for superior flavor.
  • 1 cup granulated sugar Can substitute with monk fruit for a lower glycemic load.
  • 1 cup sour cream Greek yogurt can be a substitute.
  • 3 large eggs Can use flax eggs for vegan version.
  • 1 cup mashed ripe bananas Fresh ripe bananas can be used instead.
  • 3.4 ounces instant vanilla pudding mix
  • 1 teaspoon vanilla extract
For the toppings
  • 1 cup whipped cream or whipped topping
  • 1 banana sliced for topping
  • 1/2 cup crushed vanilla wafers for topping
  • 1/4 cup caramel sauce

Method
 

Preparation
  1. Preheat your oven to 325°F and grease a 9-inch springform pan.
  2. In a medium bowl, mix the vanilla wafer crumbs and melted butter until combined.
  3. Press the crumb mixture into the bottom of the prepared pan and bake for 8 minutes. Let cool.
Making Cheesecake Filling
  1. In a large bowl, beat the cream cheese until smooth.
  2. Mix in granulated sugar until creamy.
  3. Blend in sour cream, mashed bananas, pudding mix, and vanilla extract.
  4. Add eggs one at a time, mixing on low speed.
  5. Pour filling over the cooled crust and smooth the top.
Baking & Cooling
  1. Bake for 55 to 65 minutes until edges are set with a slight wobble in the center.
  2. Turn off the oven, crack open the door, and let the cheesecake rest for 30 minutes.
  3. Remove from oven, cool completely at room temperature, then refrigerate for at least 6 hours or overnight.
Serving
  1. Before serving, top with whipped cream, banana slices, crushed wafers, and caramel sauce.
