Preparation
- Preheat your oven to 325°F and grease a 9-inch springform pan.
- In a medium bowl, mix the vanilla wafer crumbs and melted butter until combined.
- Press the crumb mixture into the bottom of the prepared pan and bake for 8 minutes. Let cool.
Making Cheesecake Filling
- In a large bowl, beat the cream cheese until smooth.
- Mix in granulated sugar until creamy.
- Blend in sour cream, mashed bananas, pudding mix, and vanilla extract.
- Add eggs one at a time, mixing on low speed.
- Pour filling over the cooled crust and smooth the top.
Baking & Cooling
- Bake for 55 to 65 minutes until edges are set with a slight wobble in the center.
- Turn off the oven, crack open the door, and let the cheesecake rest for 30 minutes.
- Remove from oven, cool completely at room temperature, then refrigerate for at least 6 hours or overnight.
Serving
- Before serving, top with whipped cream, banana slices, crushed wafers, and caramel sauce.
