- Melt the Chocolate: Put the chocolate in a heat-proof mixing bowl over a pot of simmering water. Let it melt gently, stirring occasionally (about 5-7 minutes). Be careful not to let any water get into the bowl!
- Blend the Tofu Mixture: In a food processor or blender, combine the soft tofu, sugar, chosen flavorings, and salt. Blend until completely smooth—this takes about 1-2 minutes.
- Combine Chocolate and Tofu: Once the chocolate is melted, remove from heat but keep the bowl on the pot to retain warmth. Gradually whisk in the tofu mixture until well-blended (about 2 minutes). If the chocolate thickens too much, turn on the heat briefly to loosen it.
- Taste your mousse! Adjust sweetness or flavorings as needed. Make sure to achieve the flavor you desire.
- Lighten the Mousse: For a fluffier texture, beat air into the mixture with an electric mixer for 2-3 minutes.
- Chill and Serve: Portion the mousse into serving dishes and chill in the refrigerator for at least an hour. When ready, serve topped with fresh fruit, crumbled cookies, or cake cubes.
