  • 1/4 cup dark brown sugar or white sugar Use dark brown sugar for a deeper caramel note.
  • 1/8 tsp table salt Just a pinch to enhance the sweetness.

Preparation
  1. Melt the Chocolate: Put the chocolate in a heat-proof mixing bowl over a pot of simmering water. Let it melt gently, stirring occasionally (about 5-7 minutes). Be careful not to let any water get into the bowl!
  2. Blend the Tofu Mixture: In a food processor or blender, combine the soft tofu, sugar, chosen flavorings, and salt. Blend until completely smooth—this takes about 1-2 minutes.
  3. Combine Chocolate and Tofu: Once the chocolate is melted, remove from heat but keep the bowl on the pot to retain warmth. Gradually whisk in the tofu mixture until well-blended (about 2 minutes). If the chocolate thickens too much, turn on the heat briefly to loosen it.
  4. Taste your mousse! Adjust sweetness or flavorings as needed. Make sure to achieve the flavor you desire.
  5. Lighten the Mousse: For a fluffier texture, beat air into the mixture with an electric mixer for 2-3 minutes.
  6. Chill and Serve: Portion the mousse into serving dishes and chill in the refrigerator for at least an hour. When ready, serve topped with fresh fruit, crumbled cookies, or cake cubes.

Notes

Make-Ahead: This dessert can easily be made a day in advance. Ensure to cool it properly for the best texture. Store leftovers in the fridge for up to 3 days.
