Cooking

  2. Over medium heat, gently stir the mixture until the apples begin to soften and release their juices, which should take about 5-7 minutes.
  3. Lower the heat to medium-low and simmer for 12-15 minutes, stirring regularly until the apples become very tender and resemble a chunky sauce.
  4. Add the unsalted butter and let it melt completely into the apple mixture, creating a silky texture.
  5. Pour in the heavy cream and continue to gently cook, stirring often, for 5-7 minutes until the jam is glossy and slightly thickened.
  6. Stir in the vanilla extract and cook for 1-2 minutes to marry the flavors.
  7. Remove from heat and let the jam cool slightly before spooning it into a clean jar. Allow it to cool completely before sealing and refrigerating.
