Preparation
- Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix 1 cup softened butter, 2 cups all-purpose flour, 1/2 cup granulated sugar, and 1/4 teaspoon salt until a soft dough forms.
- Press the dough evenly into the prepared pan, using your fingers or the back of a measuring cup for a smooth finish.
- Bake the crust for 18 minutes, or until lightly golden around the edges.
Filling
- While the crust bakes, whisk together 3 large eggs, 1 cup light corn syrup, 1 cup packed brown sugar, 2 tablespoons melted butter, 2 teaspoons vanilla extract, and 1/4 teaspoon salt in a large bowl.
- Stir in 2 cups chopped pecans until they are evenly coated with the sweet filling.
- Pour the pecan filling over the warm crust, spreading it gently into an even layer.
Baking
- Return the pan to the oven and bake for 30 to 35 minutes, until the center is mostly set.
- Allow cooling completely in the pan before chilling for at least 1 hour.
- Lift the bars out using the parchment and cut into squares.
Notes
For serving, dust with powdered sugar and serve alongside vanilla ice cream or your favorite beverage. These bars can be made ahead of time and stored in the fridge.
