Ingredients

For the Filling
  • 1/2 cup unsalted butter, softened Make sure it's at room temperature for easy mixing!
  • 1/2 cup granulated sugar
  • 1 cup almond flour Look for finely ground, quality almond flour for the best texture
  • 2 large eggs, room temperature Room-temperature eggs blend more smoothly
  • 1 teaspoon vanilla extract Using Pure Madagascar Vanilla is recommended for its depth
  • 1/2 teaspoon almond extract Optional, but highly recommended for an extra layer of flavor
  • 2 tablespoons all-purpose flour
  • 1 pinch salt

Method

Preparation
  1. In a mixing bowl, combine the softened butter and granulated sugar. Beat with a hand mixer or stand mixer until the mixture becomes pale, light, and fluffy—around 2 to 3 minutes.
  2. One at a time, add the eggs to the butter-sugar mixture, mixing thoroughly after each addition.
  3. Stir in the vanilla and almond extracts until well blended.
  4. Gently integrate the almond flour, all-purpose flour, and pinch of salt into the wet mixture, mixing until combined.
  5. Continue blending until your Frangipane Cream Filling is smooth and creamy.
  6. Let the mixture rest at room temperature for 15 to 20 minutes to let the flavors meld together.
  7. You can use the filling immediately or refrigerate it until you're ready to assemble your delicious creations.
