Preparation
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, cinnamon, ginger, and salt until there are no lumps.
- In a medium bowl, whisk together the wet ingredients: buttermilk, egg, melted butter, and molasses until smooth.
- Pour the wet mixture into the dry ingredients and gently stir until just combined; don't worry about a few lumps.
- If the batter is too thick, add a splash of buttermilk to achieve the right consistency.
Cooking
- Preheat a nonstick skillet over medium heat; test with water to ensure it's ready.
- Lightly spray the skillet with cooking spray to prevent sticking.
- Pour 1/3 cup of batter onto the skillet and cook for 3-4 minutes until bubbles form and the edges look set.
- Flip and cook for another 3-4 minutes until golden brown and cooked through.
- Repeat with remaining batter, adjusting heat as necessary.
Serving
- Stack the pancakes high and top with maple syrup and whipped gingerbread butter.
Notes
For crispy edges, increase the skillet temperature slightly. Avoid overmixing to ensure fluffy pancakes.
