Ingredients
  

For the Chicken
  • 2 large chicken breasts Opt for organic, free-range for better flavor.
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon honey Can be substituted with agave for a lower-calorie option.
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Mango Avocado Salsa
  • 1 ripe mango, diced
  • 1 ripe avocado, diced Choose ripe avocados for best flavor.
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons chopped cilantro
  • 1 tablespoon extra lime juice Helps prevent browning of avocado.

Method
 

Preparation
  1. Pat the chicken breasts dry and rub them with olive oil, lime juice, minced garlic, honey, paprika, salt, and black pepper for an even coat.
  2. Allow the chicken to rest for 15 to 20 minutes to let the seasoning penetrate the meat.
Grilling
  1. Preheat your grill or grill pan over medium-high heat.
  2. Grill the chicken for 5 to 7 minutes per side or until it reaches an internal temperature of 165°F.
  3. Once grilled, let the chicken rest on a plate for 5 minutes.
Prepare the Salsa
  1. In a bowl, gently combine diced mango, diced avocado, red onion, cilantro, and extra lime juice.
Serving
  1. Slice or leave the chicken whole, then spoon the mango avocado mixture over the top and serve immediately.

Notes

For a beautiful presentation, plate the grilled chicken on a platter with leftover marinade drizzled around. Enjoy outdoors during a sunny picnic!
