Preparation
  1. In a medium bowl, beat the softened butter and granulated sugar until pale and fluffy—almost like whipped cream.
  2. Add in the egg, almond extract, vanilla extract, and salt. Mix until smooth; the mixture should have an almost glossy sheen.
  3. Stir in the almond flour until a thick, creamy filling forms—resist the temptation to taste just yet!
Assembling the Croissants
  1. Carefully slice each croissant without cutting all the way through, creating a pocket for the filling.
  2. Spoon or pipe the luscious filling inside each croissant, making sure to fill them generously.
  3. Spread a small amount of filling on top of each croissant and sprinkle with sliced almonds for an extra crunch.
Baking
