  • 1 lb cooked or canned salmon, drained Opt for wild-caught salmon for superior flavor and nutritional benefits.
  • 1 cup breadcrumbs Use panko breadcrumbs for an extra crispy texture.
  • 1 large egg Acts as a binder.
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced Enhances flavor.
  • 2 tbsp chopped fresh parsley
  • 2 tbsp mayonnaise Can swap for Greek yogurt for a lighter option.
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice Adds citrus zing.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp oil for frying Use when cooking.

Method
 

Preparation
  1. In a large bowl, add the salmon and flake it well with a fork to achieve a fine texture.
  2. Gently fold in breadcrumbs, egg, onion, garlic, parsley, mayonnaise, Dijon mustard, lemon juice, salt, black pepper, and paprika until just combined.
  3. Divide the mixture into 8 even portions and shape into patties. If the mixture feels soft, chill in the refrigerator for 10 to 15 minutes.
Cooking
  1. In a heavy-bottomed cast iron skillet, heat the oil over medium heat until shimmering.
  2. Carefully place the patties in the skillet. Cook for 4 to 5 minutes per side, or until golden brown.
Serving
  1. Transfer the patties to a plate and serve warm with lemon wedges or your favorite dipping sauce.

Notes

To reheat, place the patties in a preheated oven at 350°F (175°C) for about 10 minutes or in an air fryer for 5-7 minutes. Microwaving is not recommended as it can compromise texture.
