Method
Toast the Sesame Seeds
- In a dry sauté pan, add the sesame seeds over medium-high heat. Stir continuously!
- Once they turn golden, reduce heat and keep toasting until deep brown and fragrant—about 2-4 minutes.
Cool and Grind
- Once toasted, pour the sesame seeds onto a plate to cool.
- Using a mortar and pestle, grind the seeds until they’re mostly broken up, but still retain some whole seeds for texture.
Mixing the Dressing
- To the ground sesame seeds, add the Kewpie mayonnaise, neutral oil, soy sauce, rice vinegar, optional mirin, and honey.
Whisk and Adjust
- Whisk everything together until well combined. Taste and adjust seasoning, adding more soy sauce or honey as needed.
Store
- Transfer to a sealed container and store in the refrigerator for up to 2-3 weeks.
Notes
Keep your dressing in an airtight container to ensure freshness. This dressing can elevate a variety of dishes beyond salads, enhance grilled meats, and serve as a delightful dip.
