Ingredients
  

For the Dressing
  • 3 tablespoons white sesame seeds Toast your own for added depth!
  • 3 tablespoons Japanese Kewpie mayonnaise Non-negotiable for rich creaminess.
  • 3 tablespoons neutral-flavored oil (e.g., avocado oil) For a subtle flavor.
  • 1.5 tablespoons Japanese soy sauce Use low-sodium for a lighter touch.
  • 1 tablespoon rice vinegar Adds a pleasant tang.
  • 2-3 teaspoons honey or brown sugar Sweeten to your liking.
  • 0.5 teaspoon toasted sesame oil A little goes a long way for deep flavor.
  • Freshly ground black pepper To taste.

Method
 

Toast the Sesame Seeds
  1. In a dry sauté pan, add the sesame seeds over medium-high heat. Stir continuously!
  2. Once they turn golden, reduce heat and keep toasting until deep brown and fragrant—about 2-4 minutes.
Cool and Grind
  1. Once toasted, pour the sesame seeds onto a plate to cool.
  2. Using a mortar and pestle, grind the seeds until they’re mostly broken up, but still retain some whole seeds for texture.
Mixing the Dressing
  1. To the ground sesame seeds, add the Kewpie mayonnaise, neutral oil, soy sauce, rice vinegar, optional mirin, and honey.
Whisk and Adjust
  1. Whisk everything together until well combined. Taste and adjust seasoning, adding more soy sauce or honey as needed.
Store
  1. Transfer to a sealed container and store in the refrigerator for up to 2-3 weeks.
