Ingredients
  

Main ingredients
  • 1 lb Brussels sprouts (trimmed weight) Look for firm, bright green sprouts.
  • 4 tsp fish sauce Using Red Boat Fish Sauce is recommended for quality.
  • 1 Tbsp maple syrup Use Grade A or B maple syrup for authentic sweetness.
  • 1/4 tsp white or black pepper Freshly ground adds a subtle kick.
For fried garlic
  • 5-6 cloves garlic, chopped Use fresh cloves for better flavor.
  • 4 Tbsp neutral flavored oil Save the oil from frying for extra garlic flavor.
  • optional fried garlic or 1/4 teaspoon granulated garlic Homemade fried garlic adds amazing crunch.

Method
 

For the Fried Garlic
  1. Heat the oil: In a small pot or round-bottomed wok over medium-low heat, add 4 tablespoons of neutral oil.
  2. Fry the garlic: Add a piece of chopped garlic as a tester. Once it bubbles, add remaining garlic and fry until golden (about 3-4 mins).
  3. Strain: Use a fine-mesh sieve to strain the garlic and reserve the oil on a paper towel-lined plate.
For the Brussels Sprouts
  1. Prepare the pan: In a large skillet, coat the bottom with reserved garlic oil and heat over medium-high until shimmering.
  2. Cook the sprouts: Place Brussels sprouts cut side down, sauté until browned on the bottom (about 4 mins).
  3. Flip and finish: Flip sprouts, cook for an additional minute, and remove from pan.
  4. Combine: Add the first batch back in, toss with fish sauce, maple syrup, and pepper, heating through.

Notes

Store in an airtight container in the fridge for up to 3 days. Reheat in a skillet to restore crunch. You can prepare the fried garlic in advance.
