Preparation
  1. In a small bowl, combine fish sauce, lime juice, and sugar. Stir until the sugar is mostly dissolved.
  2. Add the sliced garlic, shallots, and chilies. Let this mixture sit for at least 10 minutes to infuse the flavors.
Cooking Eggs
  1. Crack the eggs into a bowl. Heat a 10-inch non-stick pan over medium heat and add the neutral oil.
  2. Pour the eggs into the pan. Use a spatula to shape the whites circularly, and gently break the yolks to create the marbled effect.
  3. Cook until the whites are set and the yolks remain semi-runny (about 1.5 minutes).
Serving
  1. Quickly slide the eggs onto a plate of jasmine rice. Drizzle the flavorful sauce over the eggs and serve immediately to avoid overcooking.
  2. If using toppings, sauté or reheat them before placing them on the eggs right before serving.
