- In a small bowl, combine fish sauce, lime juice, and sugar. Stir until the sugar is mostly dissolved.
- Add the sliced garlic, shallots, and chilies. Let this mixture sit for at least 10 minutes to infuse the flavors.
Cooking Eggs
- Crack the eggs into a bowl. Heat a 10-inch non-stick pan over medium heat and add the neutral oil.
- Pour the eggs into the pan. Use a spatula to shape the whites circularly, and gently break the yolks to create the marbled effect.
- Cook until the whites are set and the yolks remain semi-runny (about 1.5 minutes).
Serving
- Quickly slide the eggs onto a plate of jasmine rice. Drizzle the flavorful sauce over the eggs and serve immediately to avoid overcooking.
- If using toppings, sauté or reheat them before placing them on the eggs right before serving.
