Preparation
- Slice each papaya in half lengthwise, then gently scoop out the seeds.
- Dice the kiwi, mango, and pineapple or melon into small cubes.
- In a large mixing bowl, combine all the diced fruits and squeeze fresh lime juice over the top, tossing gently to coat.
- Drizzle honey or maple syrup over the fruit salad if desired, and mix lightly.
- Generously spoon the fruit mixture into each papaya half, packing it in well.
- Add fresh mint leaves atop for garnish and serve immediately.
Notes
Best eaten fresh, ideally within the same day. Fruit mixture can be stored in the fridge for up to 2 days but avoid storing filled papaya halves as they lose texture. Optional to customize with different fruits or sweeteners.
