  • 2 pieces ripe papayas, halved and seeds removed Look for papayas that yield slightly to pressure for optimal ripeness.
  • 1 cup fresh kiwi, peeled and diced Choose kiwis that are firm yet slightly soft.
  • 1 cup mango, diced Mangoes should be fragrant and slightly soft when ripe.
  • 1 cup pineapple or melon, diced If using canned pineapple, ensure it’s packed in juice, not syrup!
  • 1-2 pieces fresh limes, juiced Fresh lime juice is best; bottled juice can taste flat.
  • 1-2 teaspoons honey or maple syrup Optional, for added sweetness.
  • to taste fresh mint leaves for garnish Choose bright, fresh mint, free from wilting.

Method
 

Preparation
  1. Slice each papaya in half lengthwise, then gently scoop out the seeds.
  2. Dice the kiwi, mango, and pineapple or melon into small cubes.
  3. In a large mixing bowl, combine all the diced fruits and squeeze fresh lime juice over the top, tossing gently to coat.
  4. Drizzle honey or maple syrup over the fruit salad if desired, and mix lightly.
  5. Generously spoon the fruit mixture into each papaya half, packing it in well.
  6. Add fresh mint leaves atop for garnish and serve immediately.

Notes

Best eaten fresh, ideally within the same day. Fruit mixture can be stored in the fridge for up to 2 days but avoid storing filled papaya halves as they lose texture. Optional to customize with different fruits or sweeteners.
