For the green beans
  • 1 pound fresh green beans, trimmed Opt for bright green beans with a glossy finish; organic will provide the best flavor and texture.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced Fresh garlic is preferred.
  • 1/3 cup grated Parmesan cheese Use freshly grated Parmigiano-Reggiano for superior taste.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley For garnishing.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) for crispiness.
  2. Wash and dry the green beans thoroughly; moisture will steam the beans instead of roasting them.
  3. Trim the ends of the green beans with a sharp chef’s knife for a refined presentation.
  4. On a lined baking sheet, drizzle the green beans with olive oil, then sprinkle minced garlic, salt, and pepper. Toss gently to coat.
Roasting
  1. Arrange the green beans in a single layer on the baking sheet.
  2. Generously sprinkle the grated Parmesan cheese over the beans.
  3. Roast in the oven for 15 to 18 minutes until tender and cheese is lightly golden.
  4. Upon removing from the oven, sprinkle with chopped parsley and serve immediately while warm.

Notes

For added flavor, consider a sprinkle of lemon zest or tossing in cherry tomatoes during the last few minutes of roasting.
