  • 1 sheet puff pastry, thawed Brand like Pepperidge Farm is recommended for quality.
  • 2 pieces fresh peaches, sliced Choose ripe, juicy ones for the best flavor.
  • 2 tablespoons granulated sugar Add more if you like it sweeter.
  • 1 teaspoon lemon juice Freshly squeezed works best.
  • 1 teaspoon cornstarch Helps thicken the peach juices.
  • 1 piece egg For egg wash; happy hens make the best eggs!
  • 1 tablespoon milk Also for the egg wash.
Glaze
  • 1 cup powdered sugar Use organic for the cleanest taste.
  • 2 to 3 tablespoons milk Adjust for glaze consistency.
  • 1/2 teaspoon vanilla extract Always opt for pure for strong flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine the sliced peaches, granulated sugar, lemon juice, and cornstarch. Stir gently until the peaches are coated and set aside.
  3. Lightly roll out the thawed puff pastry on a floured surface, then cut it into 6 equal squares.
  4. Use a knife to lightly score a border about 1/2 inch from the edge of each square.
Assembly and Baking
  1. Place pastry squares onto the prepared baking sheet and arrange the coated peach slices in the center of each square.
  2. In a small bowl, whisk together the egg and 1 tablespoon milk. Brush this mixture over the pastry edges.
  3. Bake for 15 to 18 minutes, or until the pastry is puffed and golden brown.
Glaze Preparation and Serving
  1. While the danishes cool, whisk together the powdered sugar, 2 to 3 tablespoons milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled danishes and let it set before serving.

Notes

If you want a touch of almond flavor, consider adding a few drops of almond extract to your glaze. Store leftovers in an airtight container.
