Preparation
  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the peanut butter, softened butter, brown sugar, and granulated sugar until creamy and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth and fully combined.
  4. Stir in the flour, baking soda, and salt until the dough is soft yet manageable.
  5. Scoop the dough into even balls, rolling lightly in extra granulated sugar if desired.
  6. Place the dough balls on the prepared baking sheet and flatten each with a fork into a crisscross pattern.
  7. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are just set.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Sprinkle with flaky sea salt if desired before serving.
