Preparation
- If using wooden skewers, soak them in water for at least 20 minutes to prevent burning on the grill.
- In a large bowl, toss the chicken chunks with olive oil, ranch seasoning, paprika, black pepper, and salt until each piece is evenly coated.
- Thread the seasoned chicken onto the skewers, leaving a little space between pieces for even cooking.
Cooking
- Preheat your grill until hot. Cook the skewers, turning as needed, until the chicken is golden and fully cooked (about 10-12 minutes).
- In a small saucepan over low heat, melt the butter and stir in the minced garlic. Cook just until fragrant.
- Remove from heat, then stir in the parmesan cheese and chopped parsley until well combined. Brush this garlic parmesan butter generously over the hot skewers.
- Serve warm with extra parmesan and parsley on the side.
Notes
For best flavor, serve with a side of fresh salad or grilled vegetables. Can be prepared ahead of time; marinate chicken and assemble skewers a day before grilling.
