Method
 

Preparation
  1. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning on the grill.
  2. In a large bowl, toss the chicken chunks with olive oil, ranch seasoning, paprika, black pepper, and salt until each piece is evenly coated.
  3. Thread the seasoned chicken onto the skewers, leaving a little space between pieces for even cooking.
Cooking
  1. Preheat your grill until hot. Cook the skewers, turning as needed, until the chicken is golden and fully cooked (about 10-12 minutes).
  2. In a small saucepan over low heat, melt the butter and stir in the minced garlic. Cook just until fragrant.
  3. Remove from heat, then stir in the parmesan cheese and chopped parsley until well combined. Brush this garlic parmesan butter generously over the hot skewers.
  4. Serve warm with extra parmesan and parsley on the side.

Notes

For best flavor, serve with a side of fresh salad or grilled vegetables. Can be prepared ahead of time; marinate chicken and assemble skewers a day before grilling.
