Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- Whisk together the flour, cocoa powder, baking soda, and salt in a bowl until well combined.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg, vanilla extract, and red food coloring until the mixture is well combined and evenly colored.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
- Spread the cookie dough evenly into the prepared baking pan, smoothing the top with a spatula.
Baking
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the bars are baking, prepare the cream cheese frosting by beating together softened cream cheese, powdered sugar, softened butter, and vanilla extract until the mixture is smooth and fluffy.
- Once the bars are completely cooled, spread the cream cheese frosting over the top.
- Cut into squares and serve.
Notes
For optimal results, avoid overmixing and ensure the butter is properly creamed with sugar. Store leftovers in an airtight container in the fridge for up to a week.
