Method
Prepare The Dough
- In a large bowl, combine the flour, sugar, and salt.
- Add the cold, cubed butter, and using your fingertips or a pastry cutter, work it into the mixture until coarse crumbs form.
- Gradually add ice water, one tablespoon at a time, until the dough starts to come together.
- Shape it into a disk, wrap in plastic, and refrigerate for at least 1 hour.
Prepare The Peach Filling
- In a separate bowl, combine sliced peaches, granulated sugar, cornstarch, vanilla extract, lemon juice, and cinnamon (if using).
- Toss gently to coat, and let the mixture rest for about 10-15 minutes to draw out the juices.
Roll Out The Dough
- After the dough has chilled, preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll the chilled dough into a 10 to 12-inch circle, about ¼ inch thick.
- Transfer it to a parchment-lined baking sheet.
Assemble The Galette
- Spoon the peach filling into the center of the rolled dough, leaving a 2-inch border.
- Gently fold the edges of the dough over the fruit, overlapping and sealing the dough as needed to create a rim.
Add Finishing Touches
- Brush the exposed crust with the beaten egg for a beautiful golden finish and sprinkle coarse sugar on top for an extra touch of sweetness.
Bake The Galette
- Bake in the preheated oven for 35 to 40 minutes, or until the crust is golden brown and the peach filling bubbles.
- Let cool slightly before serving.
Notes
Chill your ingredients for a flakier crust. Make the dough a day before and keep it in the fridge if needed.
