Ingredients
  

For the Dough
  • 1.5 cups all-purpose flour Look for unbleached for the best flavor
  • 1 tablespoon granulated sugar Or brown sugar for a richer taste
  • 0.5 teaspoon salt Sea salt enhances the flavor
  • 0.5 cup cold unsalted butter, cubed Use high-quality butter like Kerrygold for a richer taste
  • 3-4 tablespoons ice water Always use cold!
For the Filling
  • 4-5 pieces ripe peaches, sliced Don't skimp on ripeness; juicy peaches are key!
  • 0.33 cup granulated sugar Adjust based on the sweetness of your peaches
  • 1 tablespoon cornstarch This keeps the filling from being too runny
  • 1 teaspoon vanilla extract Pure vanilla is best
  • 1 teaspoon lemon juice Adds brightness to the flavor
  • 0.5 teaspoon cinnamon Optional, but oh, so good!
For Finishing
  • 1 piece egg, beaten For that lovely golden crust
  • 1 tablespoon coarse sugar Optional, gives a lovely crunch on top

Method
 

Prepare The Dough
  1. In a large bowl, combine the flour, sugar, and salt.
  2. Add the cold, cubed butter, and using your fingertips or a pastry cutter, work it into the mixture until coarse crumbs form.
  3. Gradually add ice water, one tablespoon at a time, until the dough starts to come together.
  4. Shape it into a disk, wrap in plastic, and refrigerate for at least 1 hour.
Prepare The Peach Filling
  1. In a separate bowl, combine sliced peaches, granulated sugar, cornstarch, vanilla extract, lemon juice, and cinnamon (if using).
  2. Toss gently to coat, and let the mixture rest for about 10-15 minutes to draw out the juices.
Roll Out The Dough
  1. After the dough has chilled, preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, roll the chilled dough into a 10 to 12-inch circle, about ¼ inch thick.
  3. Transfer it to a parchment-lined baking sheet.
Assemble The Galette
  1. Spoon the peach filling into the center of the rolled dough, leaving a 2-inch border.
  2. Gently fold the edges of the dough over the fruit, overlapping and sealing the dough as needed to create a rim.
Add Finishing Touches
  1. Brush the exposed crust with the beaten egg for a beautiful golden finish and sprinkle coarse sugar on top for an extra touch of sweetness.
Bake The Galette
  1. Bake in the preheated oven for 35 to 40 minutes, or until the crust is golden brown and the peach filling bubbles.
  2. Let cool slightly before serving.

Notes

Chill your ingredients for a flakier crust. Make the dough a day before and keep it in the fridge if needed.
