Preparation
- Chop and rinse the cabbage if needed, then dry it well.
- Set a large skillet or wok over medium-high heat and let it get hot.
Cooking
- Add oil to the hot pan, then toss in the garlic. Stir for 10-20 seconds until fragrant.
- Add the cabbage in batches if necessary, stir and toss to coat with the garlicky oil.
- Add 1 tablespoon of fish sauce and the optional teaspoon of sugar. Toss for 3-6 minutes until the cabbage softens but still has some bite.
- Taste and adjust seasoning by adding more fish sauce, pepper or chili for heat, and a squeeze of lime if desired.
- Serve immediately while hot.
Notes
For best results, do not walk away from the pan and aim for tender cabbage with a little crunch and some golden edges. This dish works well as a side to rice or topped with a fried egg.
