Ingredients

Core Ingredients
  • 1 cup unsalted butter, melted Use high-quality European-style butter for a richer flavor.
  • 1.25 cups brown sugar, packed Consider using monk fruit or coconut sugar for a lower glycemic index option.
  • 1 tablespoon vanilla extract
  • 1.25 cups all-purpose flour For gluten-free, substitute with almond flour.
  • 1.25 cups old-fashioned oats Stick with whole rolled oats for better texture.
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 11 ounces soft caramels, unwrapped Can substitute with dairy-free caramel for a vegan version.
  • 1/3 cup heavy cream Coconut cream can be used for a dairy-free option.
  • 1 cup semisweet chocolate chips Opt for dark chocolate chips for more antioxidants.
  • 1 teaspoon flaky sea salt Optional but enhances flavors.

Method

Preparation
  1. Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, stir together the melted butter, brown sugar, and vanilla extract until well combined.
  3. Add the flour, oats, baking soda, and salt, then mix until a thick, crumbly dough forms.
  4. Press half of the oat mixture firmly into the prepared pan, creating a solid base.
  5. Bake the crust for 10 minutes, just until it starts to set, then remove it from the oven.
Assembly
  1. In a saucepan over low heat, melt the soft caramels with the heavy cream, stirring until smooth and velvety.
  2. Sprinkle the chocolate chips evenly over the warm crust.
  3. Pour the melted caramel mixture over the chocolate chips, ensuring even coverage.
  4. Crumble the remaining oat mixture over the caramel layer, spreading it evenly.
Baking
  1. Bake for an additional 15 to 18 minutes, until the top is lightly golden and the caramel is bubbling.
  2. Allow to cool completely before slicing into bars.
  3. If desired, sprinkle with flaky sea salt before serving to enhance the flavor.
