  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped strawberries (fresh or frozen) Choose fresh, ripe strawberries for maximum sweetness.
Cream Cheese Filling
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, combine flour, baking soda, and salt. Gradually add this mixture to the creamed ingredients until just blended.
  5. Gently fold in the chopped strawberries.
  6. In a small bowl, mix softened cream cheese and powdered sugar until creamy; set aside.
Baking
  1. Drop tablespoon-sized amounts of cookie dough onto the prepared baking sheet, making a small indentation in the center.
  2. Fill each indentation with a teaspoon of the cream cheese mixture.
  3. Bake for 12-15 minutes until edges are lightly golden. Allow cookies to cool before transferring to a wire rack.

Notes

Serve these cookies warm and dust with powdered sugar for an elegant touch. Store in an airtight container at room temperature for up to a week. Freeze the dough for future baking.
