Ingredients
  

For the Margarita
  • 6 ounces pineapple juice Use 100% pure pineapple juice for the sweetest flavor.
  • 4 ounces tequila Opt for a good-quality tequila, such as Espolon or Patron.
  • 2 ounces lime juice Freshly squeezed is always best!
  • 1 ounce simple syrup You can make your own by dissolving equal parts sugar in hot water.
  • 1 medium jalapeño, sliced Adjust based on your spice tolerance.
  • 1 tablespoon Tajin seasoning To rim the glasses.
  • 1 lime wedge lime wedge For rimming the glasses.
  • Ice cubes Ice Essential for chilling your drink.
  • Pineapple wedges for garnish Pineapple wedges Enhances the tropical vibe.

Method
 

Preparation
  1. Pour the Tajin seasoning onto a small plate for rimming the glasses.
  2. Rub a lime wedge around the rim of two lowball glasses and dip them into the Tajin.
  3. Fill a cocktail shaker with ice cubes, then add the pineapple juice, tequila, freshly squeezed lime juice, simple syrup, and 5-6 jalapeño slices.
  4. Shake vigorously until chilled, about 15 seconds.
  5. Fill the prepared glasses with crushed ice, then strain the cocktail mixture over the top.
  6. Garnish with remaining jalapeño slices and pineapple wedges.
  7. Serve immediately while it’s still cold.

Notes

Chill everything for a crisp drink. You can scale up the recipe for parties but don't add ice until serving to avoid dilution.
