  • 2 Tbsp lime juice Freshly squeezed for the best flavor.
  • 1.5 Tbsp fish sauce Adds depth; hard to replicate with anything else.
  • 1 Tbsp palm sugar Finely chopped and packed; essential for subtle sweetness.
  • Vegetables for dipping: cucumber, carrots, cabbage, radish, long beans, cauliflower A colorful medley of flavors.
  • Medium boiled eggs To serve alongside the dip.
  • Jasmine rice Serves as a lovely base.

Preparation
  1. Preheat the oven: Broil on high or set your grill to medium heat.
  2. Sear the shrimp in a hot pan with a bit of oil until browned and cooked through, about 3-4 minutes. Set aside.
  3. Broil the garlic, shallots, and chilies for about 5-7 minutes until charred but not burnt.
  4. Pound the charred garlic, shallots, and chilies in a mortar and pestle until creamy.
  5. Add palm sugar and pound until dissolved.
  6. Incorporate seared shrimp (saving one for garnish) and pound until shredded and mixed well.
  7. Mix in lime juice and fish sauce; adjust seasoning as needed.
  8. Serve plated with an assortment of vegetables, medium boiled eggs, and jasmine rice as a base.

Notes

Tips: Watch the garlic closely; you want it charred but not burnt for added depth and smokiness. Use the freshest ingredients for the best flavor.
