Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and milk until well combined. Add a pinch of salt and pepper.
  3. In a greased casserole dish, layer with chopped spinach, dollops of cottage cheese, and optional bread cubes.
  4. Pour the egg mixture evenly over the layers, allowing it to seep in.
  5. Sprinkle shredded cheese on top.
  6. Bake for 25-30 minutes until the eggs are set and the top is golden.
