Ingredients

Base Ingredients
  • 1.5 cups old-fashioned oats Opt for whole-grain for maximum fiber.
  • 1.5 cups milk (dairy or plant-based)
  • 3/4 cup plain Greek yogurt Rich in protein and probiotics.
  • 4 oz cream cheese, softened Use high-fat for creamier consistency.
  • 1.5 cups strawberries, chopped Reserve some for topping.
  • 2 tbsp maple syrup Can be replaced with monk fruit sweetener for lower calories.
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds Add texture and nutritional benefits.
  • 2 tbsp graham cracker crumbs For topping, mimics traditional cheesecake crust.

Method

Preparation
  1. In a medium bowl, whisk together the softened cream cheese, Greek yogurt, milk, maple syrup, and vanilla extract until smooth and creamy.
  2. Stir in the old-fashioned oats and chia seeds until they are evenly combined, ensuring no clumps remain.
  3. Fold in most of the chopped strawberries, but save a few for topping.
  4. Divide the mixture between 2 jars or airtight containers, giving it a gentle shake to settle the ingredients.
  5. Top with the reserved strawberries; cover tightly and refrigerate for at least 4 hours or overnight.
  6. Before serving, sprinkle graham cracker crumbs over the top and enjoy it cold.

Notes

For best flavor and texture, serve cold from the refrigerator. DO NOT microwave; let thaw at room temperature for about 20 minutes for optimal consistency.
