  • 1 block 1 block (8 ounces) cream cheese, room temperature Ensure it’s softened to make mixing easier—no one wants lumpy dip!
  • 1 container 1 container (8 ounces) whipped topping I recommend Cool Whip for its light texture and sweetness.
  • 3 tablespoons 3 tablespoons strawberry gelatin, like Jell-O This is the magic ingredient that adds vibrant color and flavor.
  • 1 container 1 container (16 ounces) fresh strawberries, diced, divided Use ripe strawberries for the best flavor.
  • 1/2 teaspoon 1/2 teaspoon vanilla extract A splash of vanilla elevates the dip.
Dippers
  • Pretzel crisps or graham crackers, for dipping I love pretzel crisps for that salty-sweet combo.

Method
 

Preparation
  1. Start by setting out all your ingredients and ensure your cream cheese is at room temperature.
  2. In a medium mixing bowl, use a hand mixer to beat the cream cheese until it’s smooth and creamy, about 1-2 minutes.
  3. Add the whipped topping, strawberry gelatin, and vanilla extract to the bowl, and continue to beat until everything is well combined and fluffy, approximately another 1-2 minutes.
  4. Gently fold in the diced strawberries with a spatula, reserving about 1/4 cup for the topping.
  5. Transfer the dip into a serving bowl, cover with plastic wrap, and chill in the refrigerator for at least 30 minutes.
Serving
  1. Top the dip with the reserved strawberries and serve alongside pretzel crisps or graham crackers.

Notes

This dip can be stored in an airtight container in the refrigerator for up to 3 days. Prepare it a day in advance for gatherings.
