Ingredients
  

For the Filling
  • 8 stalks celery, cut into 16 pieces Wash and dry thoroughly.
  • 8 oz cream cheese, softened Opt for full-fat for creamier texture.
  • 1/2 cup blue cheese crumbles
  • 6 slices bacon, cooked and crumbled Use thick-cut, hardwood-smoked for better flavor.
  • 3 green onions, thinly sliced Reserve some for garnish.
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
For the Topping
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs Use gluten-free if desired.
  • 1 tbsp butter, melted
  • 1 tbsp chopped chives or parsley For garnishing.

Method
 

Preparation
  1. Preheat your oven to 375°F and grease a small baking dish or line a baking sheet with parchment paper.
  2. Wash and dry the celery thoroughly, then cut each stalk into 4 pieces for easy filling and serving.
  3. In a medium bowl, blend the softened cream cheese, blue cheese, most of the crumbled bacon, green onions (reserve some for garnish), garlic powder, and black pepper until smooth and creamy.
Assembly
  1. Using a spoon or a piping bag, generously fill each celery piece with the creamy mixture.
  2. In a small bowl, combine the grated Parmesan cheese, breadcrumbs, and melted butter. Mix until well combined.
  3. Sprinkle the breadcrumb mixture evenly over the filled celery pieces.
Cooking
  1. Bake in the preheated oven for 12 to 15 minutes, until the filling is warm and the topping is lightly golden.
  2. For an extra golden finish, broil for 1 to 2 minutes at the end, watching closely to prevent burning.
Garnishing
  1. Finish with the reserved bacon, green onions, and chopped chives or parsley before serving.

Notes

For a lighter filling, consider using Greek yogurt. Store leftovers in an airtight container for up to 3 days.
