Thai Garlic Pepper Chicken

Ingredients
  

Main Ingredients
  • 500 g chicken breast or thigh, cut into 1-cm thick slices Fresh chicken for best flavor.
  • 8 cloves garlic, finely chopped Used for marinating and frying.
  • 1 Tbsp oyster sauce Adds richness.
  • 1 Tbsp soy sauce
  • 1 tsp Golden Mountain sauce Can substitute with regular soy sauce if needed.
  • 1 tsp fish sauce Adds umami.
  • 1 tsp black soy sauce For color, about 1 tsp needed.
  • 1.5 tsp sugar
  • 0.25 tsp ground white pepper
  • 0.25 tsp ground black pepper
  • 7-8 stems cilantro, chopped For garnish and flavor.
  • as needed Water To keep the mixture moist while cooking.
  • as needed Vegetable oil, for frying Use for frying garlic.

Method
 

Preparation
  1. In a bowl, combine sliced chicken with oyster sauce, soy sauce, Golden Mountain sauce, fish sauce, white pepper, and black pepper. Set aside to marinate.
Frying the Garlic
  1. In a small pot or wok, heat enough vegetable oil to cover the garlic.
  2. Add chopped garlic and fry over low heat until golden brown, about 5 minutes. Be careful not to burn it! Drain and save the oil.
Cooking the Chicken
  1. In a clean wok, heat about 2 tablespoons of the reserved garlic oil over medium heat.
  2. Add the marinated chicken along with sugar and stir-fry until cooked through, about 5-7 minutes.
  3. If the mixture is too dry, add a splash of water.
Finishing Touches
  1. Stir in half of the fried garlic and most of the chopped cilantro, then remove from heat.
  2. Just before serving, sprinkle remaining fried garlic on top.
Serving
  1. Serve over jasmine rice and enjoy.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Marinating the chicken a few hours or overnight enhances flavor.
