Preparation
- In a bowl, combine sliced chicken with oyster sauce, soy sauce, Golden Mountain sauce, fish sauce, white pepper, and black pepper. Set aside to marinate.
Frying the Garlic
- In a small pot or wok, heat enough vegetable oil to cover the garlic.
- Add chopped garlic and fry over low heat until golden brown, about 5 minutes. Be careful not to burn it! Drain and save the oil.
Cooking the Chicken
- In a clean wok, heat about 2 tablespoons of the reserved garlic oil over medium heat.
- Add the marinated chicken along with sugar and stir-fry until cooked through, about 5-7 minutes.
- If the mixture is too dry, add a splash of water.
Finishing Touches
- Stir in half of the fried garlic and most of the chopped cilantro, then remove from heat.
- Just before serving, sprinkle remaining fried garlic on top.
Serving
- Serve over jasmine rice and enjoy.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Marinating the chicken a few hours or overnight enhances flavor.
