  • 1 tbsp powdered sugar Helps stabilize the whipped cream.
  • 2 tsps pure vanilla extract Always opt for pure for best flavor.
  • 1 tsp vanilla bean paste (optional) Adds texture and signature vanilla flavor.
  • 1 tbsp gelatin powder Use unflavored gelatin.
  • 3 tbsp cold water Use filtered water for cleaner taste.
  • 1 pinch salt (optional) Enhances the flavors, omit if sensitive.
  • 2 tbsp white chocolate, melted and cooled (optional) For added sweetness and richness.

Preparation
  1. BLOOM THE GELATIN: Sprinkle gelatin over cold water in a small bowl and let it sit for 5 to 10 minutes until fully hydrated.
  2. MIX THE CREAM CHEESE BASE: Beat the softened cream cheese until smooth, then add granulated sugar and mix until creamy and glossy.
  3. ADD THE FLAVORING: Mix in vanilla extract, vanilla bean paste, and optional salt until aromatic.
  4. MELT THE GELATIN: Heat the bloomed gelatin in the microwave for 10 to 15 seconds until fully liquid. Pour it into the cream cheese mixture while mixing.
  5. WHIP THE CREAM: In a separate bowl, whip the cold heavy cream with powdered sugar until soft peaks form.
  6. FOLD THE MIXTURE: Gently fold the whipped cream into the cream cheese mixture in batches.
  7. CHILL BEFORE USING: Refrigerate the mousse for 20 to 30 minutes until slightly set.

Notes

For best results, use fresh ingredients and ensure all components are chilled. The mousse can be prepared a day in advance.
